Cooking spree...

Lately I've been cooking whatever comes to mind....why I don't know but I will tell you this, these dishes were really delish!! lol just thinking about makes me want to make them again. What I've made these past few days are:

1) Salted Caramel Apple Cupcakes
2) Scallop Risotto
3) Pad Thai
4) Camarones a la Diabla
5) Fried Polenta with Ragu alla Bolognese

6) Mexican Wedding Cookies
7) Mignardises - Petits Fours Secs

Ah, I definitely enjoyed cooking and baking that I've done lately! I can say that I have been lagging it a bit. It feels good to finally be back in the kitchen, and mixing stuff up for my family and coworkers.

Always darkest before the Dawn

What I'm about to tell you really Did happen to me. It was NOT an hallucination nor was it a figment of my imagination and for that, I'll let you be the judge.....

I can remember it like it was yesterday. I believe I was about 5 years old when this catastrophic event took place. I had woken up from a deep sleep in the middle of the night. Why? Good question!

I looked at my surroundings everything and everyone, were dormant still. It hadn't been long since I had been awake, where I see these huge Madagascar-like cockroaches crawling in and around my hamper by my bed. Then in the corner of my eye a strange dark shadowy silhouette of a figure started manifesting from the outline of my dresser onto the wall behind the nightlight, as almost every young child has had on while sleeping. Lo and behold it was an outline/shadow of a gargoyle or demon! Something similar to this......however it was sitting down on something and its head was turned to the left to look at me, when "It" came to "visit" that night.


The wings were just as big as its body. Even though it was just a shadowy outline against my bedroom wall, in my mind's eye I could see its scaly black skin like of a mythological dragon, its big gleaming eyes just glaring at me and the short little horns that just barely poked out of its head. I kind you not I was scared shitless! What was I suppose to do? I was stuck in my bed paralyzed, I could hardly move my head and not being able to scream to inform my family for help, let alone make a sound. "It" made sure that its presence was known. I couldn't tell you how long it had been there, whether it was a few seconds or minutes. All I know is that it had been there too long. I was terrified so much so that not long after I had seen it, I may have lost consciousness out of horrified disbelief. When I woke up from this hysteria, "It" was gone. Like nothing had happened, it was just a figment of my imagination or something. It was the first and last time that I saw this creature.  I don't know why it came to me but looking back to this event now, it's a bit ironic... Maybe it was just preparing me for what is YET to come however in the meantime I'll continue living life as normal and as best I can...
